Recipe - Doggy Cupcakes
Ingredients
- 125gm wholemeal plain flour
- 10gm baking powder
- 60gm oatmeal
- 1 apple, peeled, cored, seeds removed and grated
- 1/2 cup alfalfa sprouts, finely chopped
- 125gm plain yoghurt
- 45ml vegetable oil
- 15gm honey
- 2 eggs, lightly beaten
Method
- Preheat oven to 180 deg C or 170 deg C fan forced.
- Line 10 holes of a 1/3 cup muffin pan with cupcake cases.
- Combine the flour, baking powder and oatmeal in a large bowl.
- Add the apple and sprouts and stir to combine.
- Combine the yoghurt, oil, honey and eggs in another bowl.
- Add to flour mixture and fold until just combined using a wooden spoon.
- Spoon mixture into muffin holes, filling to three-quarters.
- Bake for 30 minutes or until the cupcakes are lightly browned and when a skewer is inserted, it comes out clean.
- Transfer to a wire rack to cool completely.
