Ingredients
  • 125gm wholemeal plain flour
  • 10gm baking powder
  • 60gm oatmeal
  • 1 apple, peeled, cored, seeds removed and grated
  • 1/2 cup alfalfa sprouts, finely chopped
  • 125gm plain yoghurt
  • 45ml vegetable oil
  • 15gm honey
  • 2 eggs, lightly beaten
Method
  1. Preheat oven to 180 deg C or 170 deg C fan forced. 
  2. Line 10 holes of a 1/3 cup muffin pan with cupcake cases.  
  3. Combine the flour, baking powder and oatmeal in a large bowl. 
  4. Add the apple and sprouts and stir to combine.  
  5. Combine the yoghurt, oil, honey and eggs in another bowl. 
  6. Add to flour mixture and fold until just combined using a wooden spoon.  
  7. Spoon mixture into muffin holes, filling to three-quarters.  
  8. Bake for 30 minutes or until the cupcakes are lightly browned and when a skewer is inserted, it comes out clean. 
  9. Transfer to a wire rack to cool completely.
